What is a MUST TRY food in San Francisco ?

I have listed Cioppino, Clam Chowder, Dungeness Crab and some good dinin. For seafood, which place is good for each above ? I don't want to be stuck in Fisherman's Wharf all the time and would prefer eating in a not so touristy area. What about Peruvian, Hawaiian and Japanese food there ? I heard that Ti-Couz is good too, for Brittany Style Crepe and Mojitos. Thanks! Going there soon ... :-)
